    How to Prepare Real Stargazy Pie

    With its flaky puff pastry crust, smoky bacon, fresh fish, and a creamy sauce infused with saffron, this recipe remains faithful to its Cornish origins. Don’t worry—the fish bones have been removed, making it simple to eat and savor. The dramatic presentation is part of the appeal.

    🛒 Ingredients

    For the Filling

    ✔️ 30g (1oz) butter
    ✔️ 1 onion, finely chopped
    ✔️ 1 leek, finely chopped
    ✔️ 3 rashers smoked or unsmoked streaky bacon, finely chopped
    ✔️ 20g (¾oz) plain flour
    ✔️ 3 tbsp dry white wine
    ✔️ 250ml (9fl oz) fish stock
    ✔️ 300ml (10fl oz) double cream
    ✔️ A pinch of saffron strands
    ✔️ 1 tsp salt
    ✔️ Small bunch of fresh parsley, chopped
    ✔️ 2 hard-boiled eggs, chopped
    ✔️ 6 small mackerel, butterflied (heads on, backbone and tail removed)
    ✔️ Freshly ground black pepper

    For the Pastry

    ✔️ 200g (7oz) puff pastry
    ✔️ 1 free-range egg, beaten (for glaze)

    To Serve

    ✔️ Boiled new potatoes
    ✔️ Steamed green vegetables

    👨‍🍳 Step-by-Step Cooking Method

    1️⃣ Prepare the Filling

    1️⃣ Preheat the oven to 200°C (180°C Fan) / Gas Mark 6.
    2️⃣ Melt butter in a pan over low heat. Add onion, leek, and bacon and cook until soft but not browned.
    3️⃣ Stir in the flour, cooking for 1 minute to make a roux.
    4️⃣ Gradually add white wine and fish stock, stirring constantly. Simmer for 5–10 minutes until thickened.
    5️⃣ Stir in cream, saffron, salt, pepper, parsley, and chopped eggs. Remove from heat.

    2️⃣ Assemble the Pie

    6️⃣ Roll out the puff pastry to 3mm (⅛in) thick. Cut a long 2cm (¾in) strip and press it onto the rim of a deep pie dish.
    7️⃣ Pour a little sauce into the dish and arrange mackerel with their heads resting on the dish’s edge.
    8️⃣ Pour over the remaining sauce.

    3️⃣ Create the Signature “Stargazing” Effect

    9️⃣ Cut a pastry lid slightly larger than the dish and make slits to fit the fish heads.
